Brown Rice Pork Bibimbap
Bibimbap is a super-popular
Korean dish made up of a bowl of rice, sautéed and seasoned vegetables, hot
pepper paste and usually a bit of seasoned beef, or in our case, pork, and an
egg. “Bibim” translates as “mixed” and bap translates as “cooked rice”. so
“bibimbap” literally means “mixed rice”. Before eating it, you’re supposed to
mix everything together.
· ½ pounds of lean ground pork
· 2 eggs
· 1 carrot, cleaned, grated
· 1/2 cup bean sprouts
· 1 spring onion, finely sliced
· 2 tablespoons soy sauce (split)
· 40 grams of baby spinach
·
6 button mushrooms (cleaned, quartered)
· 1 clove of garlic, minced (split)
· 1 tablespoon sesame seeds (split)
· 1 teaspoon chili powder
· 1 cup brown rice

INSTRUCTIONS

Cook
rice according to the instructions on the package.

Heat
a fry pan with a drizzle of canola oil over medium to high heat. Add pork and
lightly brown for 1-2 minutes then add half of garlic and 1 tbs of soy sauce.
Stir in chili powder and stir through half of the sesame seeds. Once cooked,
place into a bowl and cover with foil to keep warm.

In
the same pan, heat a drizzle of oil on medium to high heat. Add mushrooms,
spinach, spring onion and the remaining garlic and soy sauce. Cook until
the mushrooms have softened. Then, remove from pan. Lastly, add
some oil to the pan and fry 1 egg per person until crisp underneath.
To serve, place rice at the base of a big bowl
then place each element (mushrooms, pork, bean sprouts, carrot) into even
sections on top. Top with the egg and sprinkle with remaining sesame seeds and
salt and pepper.
